    I have an opened box of potato flakes to use so I found this using "potato flakes" as an ingredient in the search.
    Maybe its just me but these directions put my head into a spin. I had to read them three times before I could understand what was going on! But, it has been a long week so perhaps it is just me. And I didn't find the salt in the ingredient list and ended up forgetting it. This was OK. Missing something. I don't know what. I probably should have done a squeeze of lemon on them. I think that would have helped. Plus, I threw away tons - well, not tons - of potato flakes. Still - I ate my dinner.
    Now I have potato flakes and buttermilk to use so - stay tuned! :-D

    I read the recipe and I still don't know what's going on:-D I don't know about cooking on hi heat with butter, it burns..I usually use evoo or a combo of butter & evoo for hi heat.. I think salt along with lemon would have added more flavor (wonder if salt is in Creole seasoning?) Beautiful pic, looks absolutely delicious!

Love it when you get onto one ingredient and make recipes until it's all gone :) I have a huge box of instant milk powder that I need to use. I have a couple recipes but I just gotta get my butt in gear!! Love the pic.!

    It says it serves 5 yet calls for 6 fish so I guess you're suppose to cut one filet into 5 pieces and serve each piece with a whole piece on each plate. I'm just teasing you know. It's not as if I never make mistakes but the directions were a bit confusing. The photo is very nice and guess the salt would have made a difference.

    hehe Well, I'm glad it wasn't just me! Too funny, LB, about the serving sizes! I do think the salt may have made the difference. I just wasn't thinking! Sometimes I shouldn't cook on a Friday night. :)
