    Charro Beans from Notyourmomma
    I had some pinto beans left from making a bag of them last week for a recipe that only required 1/2 bag so I made this with the leftover beans. Because I only had 1/2 a bag of beans I had to adjust the other ingredients. I added them to a crock pot and halved the garlic, cumin and salt.....only added 2 strips of slab bacon, used 1/2 can of ro-tel, 1 jalapeno and used the whole can of beer....Not a fan of cilantro so I used a sprinkle of parsley instead. This is a fantastic way to make beans for a Mexican inspired meal. I will take the suggestion to mash some beans before serving next time I make them. Great recipe, Tina!!!

    OK, I'll add the 3 Jalapenos but I'll seed them first. Last time I made a pot of chili with 2 Jalapenos seeds and all it was too hot.

    Frainkieanne, if you think about it, I already had cooked beans and used them so I assume canned would work too.
    MP....I have never liked cilantro. To me it takes over the whole dish and tastes like soap!!

    Used my immersion blender to break up some of the beans for a thicker result but managed to break up ALL the beans. :(
    Blender works too good! Simmered the beans with 3 cups too much water which I ladled out at the end and used it to make rice. Added the cooked rice back into the bean slush to give it more texture. It doesn't present as well as the other photos but all the flavor is there. Well, except for the beer which I also forgot to add in.
    I'll have to call my variation Charro Rice.
    When at the store for ingredients I only picked up two Jalapenos which were seeded before going in the pot. Could have put in a third one but I'm not sure about the seeds.
    Antecedent said, the dish had good flavor. I'll try making it again without messing up.
    Added in dry cilantro in the last 10 minutes.
