A variation on our cowpoke pinto beans...a little more oomph and oh so good with all the bacon flavor.

Ingredients
  • 1 lb of pinto beans, washed picked over and soaked overnight
  • 2 cloves of fresh garlic
  • 1 lb. package of bacon finely diced
  • 2 tomatoes finely diced ( I use a can of diced tomatoes)
  • 1/2 large white onion diced
  • 3 sliced jalapenos
  • 2 tsp of salt
  • 1 tbsp of cumin
  • 1 can of beer

Directions
  1. Cook the beans in water until almost tender, approximately 2 hours on low.
  2. Do not use the soaking water to cook the beans in.
  3. Do overload the beans with water, but don't let them dry out.
  4. In a separate pan, cook the bacon. Set aside.
  5. After two hours, add the beer, the salt, cumin, jalapenos, onions and tomatoes.
  6. Simmer for 15 minutes on medium high heat.
  7. Add the bacon and simmer another 20 minutes more.
  8. Can add chopped clilantro if desired.
  9. Great with rice, or alone. Can mash 2 cups and add back into the beans to thicken the texture.

Sound great!!!


Made these tonight and served them over rice....they will be great for lunch all week. The bacon makes the beans sublime. Not at all spicy.
