Chicken Salad Puffs

    I made all of this up earlier this morning so that we could have a quick dinner ready when we got home from a super busy day :) I have never made dough like this! Now I see why it's referred to as a pastry, it's super light and airy. These are small like the size of a biscuit so perfect for a hand held appy. For a good dinner about 3 would do. You could easily probably triple the size of dough you drop to make bigger pastries so you can have one good size puff for lunch. I checked these and they were done at 27 minutes, so I would start checking at 20 minutes to be safe. I couldn't bring myself to dig out any of the insides of the pastry, so I just didn't :) Good stuff! Oh, used Craisins in place of raisins.
    Look's like Keni made this a LONG time ago, I'm guessing even before the IMI was around.

    Neat way to serve chicken salad! I adore a good chicken salad, I usually make it during the summer months and serve inside a quartered homegrown tomato..this would be a great way to have chicken salad throughout the year:)

    I read the recipe first and when I got to the part about digging out the dough, I thought "what a waste after all of that work!" So, I'm glad you didn't do that. :-) It looks good to me, except I'd have to leave out the raisins. Pretty picture!

The pastry almost, almost looks like a choux pastry, the cream puff stuff, but denser. My hubby LOVES chicken salad. And Lord knows I have a ton of leftover cooked chicken in my freezer. I think Craisins in place of raisins is a brilliant idea. I bookmarked this to give it a whirl. Thanks.

    Had this last night for dinner and really, really enjoyed it. I just used my own Chicken salad mixture in the puffs (chicken, onion, tomato, pepper and mayo) . I halved the recipe and made four larger ones. It really changes up the taste and makes it seem more festive somehow. :) The puffs were easy to make and I'll do them again for sure. I like Michelle's idea of just making small ones more appetizer sized. I think serving some cream cheese and hot pepper jelly in them would be fun. I didn't scoop out the inside dough either.

    You know Michelle...I'd even be a tad worried if I did scoop out any of the insides that the pastry might fall apart once I started to eat the sandwich. I think you need the insides in there to help with the structure. I cooked mine for 30 min.
