    This has been made by a few people here but hasn't been given a thread here yet - until today! :)
    I'm lucky enough to still be getting tomatoes so I decided to try this on a blt. It really added a lot of flavor to the sandwich! Blt's are good enough with just mayonnaise, but this added something really nice and different. I really like it and I'm glad I have more bacon and tomatoes for tomorrow.
    Two chipotles left! :-)

    as for chipotle mayo, I've done that for a few sammiches and LOVE it

    you get more run out of a can of chipotles than anyone I know! hehehe :)

    That reminds me - I made this up last night so it sat for about 24 hours. Not sure if that does anything for the flavor or not.

    I'm thinking of using up the rest of my home grown Yukon golds on your potato recipe. Thank goodness I don't need five pounds of them for little ol' me. Gotta figure out how to cut that one down! :)

    I'm sorry, I know that'a pain in the bum.... my recipes are always pretty big... I know some(Mr. P) will just make it and eat it in two sittings.... others will cut it in half...but cutting into 6ths wouldn't be fun. ;)

    you could do 1lb of taters, 1-2T butter, couple T of sour cream, couple squirts of lime, 2-3 pieces bacon, 1 pepper, and a scant 1/2 cup cheese. :)

    I have everything but the sour cream. I'm not a big fan so I probably won't buy it just for this. I do want to try them as I have everything else. I found a recipe for a steak marinated in chipotle, too.

    So happy you enjoyed, Frankieanne...I always have a batch of this in the fridge as my guy loves it on practically everything. It makes a great chicken salad which is one of his favorites. And I'm with ML2C with you still having tomatoes. Our season ended way too soon.

    I mainly just did the green onion to give the picture a little more color, but it was a nice addition! Shrimp tacos would be good too and a dip for chicken quesadillas, okay we could go on forever lol!

    Only ground up 2 chipotles in the adobo sauce.
    Made this as a dip for saltless white crackers (saltines). A quick and dirty snack to stave off the hunger pangs if one could only eat a few.
    Polished off the whole sleeve of crackers!
