Club Quesadilla

    Well I had left over chicken to use up, and this was in my recipe box!! For the cheese I shredded some fresh mozzarella. This was so good, it has bacon so what's not to like? :) If I'm going to use tomatoes in a panini or quesadilla I always cut them early and let the juices come out on a paper towel, just to make sure the tortilla, or bread doesn't get too soggy from heating up, just a tip, from experience lol! Delicious Keni!

    Both. I'm game for anything, and my daughters are pretty much too, but my day-in and day-out person I cook for is my missus, and she's a little more particular. Less open to experimentation. But I will have to say that we've been doing more and more stuff the last couple of years that we would have never eaten before, so her tastes, and mine are expanding. There are some things I will never get my missus to even try, like a steak that isn't well-done. Never. Fortunately my daughters learned from me and like them medium or medium rare. I even have gotten their boyfriends down to that from well-dones. But my missus? Never. Unless she looses her vision...

Sorry a TX gal here, and nobody eats anything but rare or med rare around here ;) Duboo, I'm only 29 (about to be 30....eeeek) but I have transformed my husband from eating very picky to only disliking very few things (mushrooms and nuts, some condiments) and it just takes patience. I cooked it and cooked it until his taste buds say, "Okay, we like it!" and he does now! He hated avocado, onions, bell peppers, tomatoes, zucchini, cauliflower, cucumbers and a lot more....what veggies does she not like??

    She is a pretty good eater, but she has her hangups. We've been married 23 years and when I met her about the only things she'd eat were salad with cheese and thousand island dressing, cheese pizza and diet coke. She rarely ate any meat at all, so I really have made great progress :) She's a great wife and a wonderful mom, so I can work with some of these small things :)

    Mommyluvs2cook and I have been playing around with making things in our waffle makers - other than waffles! I tried this tonight and it was delicious. Layered: swiss cheese, spinach, bacon, red onion, tomato and then turkey on the top! I didn't use the mayonnaise/dill thing. It was enough for me as it was. Added a picture to the recipe. Guess you could call it a quesaffle! :-)

    So the tortilla actually cooked up like that?? Crazy! I thought since it was already cooked it wouldn't react to the shape that much...interesting!

    Yes, the flour tortilla kinda morped into a waffle shape thing. I had to press down on the maker lid so I suppose that had something to do with it.

    I have tried the hash brown one, although I used thawed out Tator Tots. I've had them for breakfast twice now. They're really good waffled! Drizzle a bit of ketchup on top... :)
