Good straight up eating. I made these before and didn't let the griddle get hot enough for good rise. This is a good cake. Batch made 6 cakes. Three minutes on the first side and two minutes on the other side.
Set the griddle or pan to med-high heat with a little oil until it just starts to smoke. Then put the first ladle of batter on and reduce the heat to medium. That will get you a nice rise in all the cakes.
Wish I could bump up my star rating on this recipe.
