    I have had this book marked for some time now and wanted to try my luck with meats in a crock pot again. With a little help from ML2C, Im happy to say it was a huge success. I LOVED this. It was fall apart tender and very juicy. I added 8 carrots and 1 potato (all I had) I seared the 3lb roast before adding it to the slow cooker. The potato didnt make it for the pic. I made the mistake of tasting a piece about 6 hours into cooking. It was sooo good that by the time it was ready there were none left. And the left overs were fantastic. I will have to make this again. Thanks Jeanbob for a really great recipe

    Wow, that looks really delicious, MrP! Did you use all the herbs listed? I've never used chervil and I think I've only used tarragon once or twice. Looks like a lot of flavor there with all those herbs.

    Frankie, I didnt use that chervil stuff. I dont even know what that is. I did use tarragon, though, and everything else listed. I also used a full cup of broth/bullion thinking that I would need the extra liquid for the carrots and potato. There was plenty of liquid left. All the herbs <------I dont like saying that word. Doesnt roll off the tongue well--- really worked for the roast and the potato and carrots absorbed a ton of flavor.

    ML2C, I had to be careful removing the roast for cutting cuz I wanted to try and get a good pic. It wanted to break. The knife just fell through the roast.

You're lucky it was still tender, cus one reason why so many people think everything tastes the same when it comes out of a slow cooker is cus of the cooking liquid. I have a tried and true recipe for "smoked" meat in the slow cooker .... you add any meat, turkey, chicken, pork, beef, doesn't matter, and 1T per lb of meat of liquid smoke and NOTHING else ... the meat comes out smoky and moist.

    Think what happens when you are in a lake .... you are covered with water but you still come out wrinkly.... If you have a lot of water, omsosis principle means that the lesser amount of liquid, ie in the body or in the meat, will naturally try to move itself to the larger body. So, you always keep liquid to a minimum for the best quality! :-)

    But, the important part of this lesson is that your pork was good! hehehe Sorry, I'm a geek/nerd .... can't help it ... I'm science minded. Forgive.

    I had read somewhere that the liquid should cover the meat. I read somehwere esle that you shouldnt stir. I need a Crockpot for Dummies book : )

Many times, as with the smoked meat or my burrito mix or a roast(which I rarely do, as I don't really like them), I don't stir, but, when I use it strictly as a way of cooking a dish, oftentimes I will actually remove the lid(cardinal sin #1) AND stir it(cardinal sin #2). I state such in the recipes, too..... that it's okay to stir this recipe, or remove the lid so it thickens up. :-)

    I have a Rival, MrP. They are the original Crock Pot makers. I happen to love it. It came with a meat rack (I recommend one!) and the pot part is a ceramic crock material and removable. I doubt they make my model anymore though as I have had it for around 10 years or so.
    I am a slow cooker stirrer as well, Keni. I know you aren't supposed to but I can't resist. :)

    It caught my eye that Rival is the original crock pot makers and I did a quick check on the internet. Seems there is another crock pot maker out there that claims to be the original crock pot maker too. Company name is Crock Pot. It's neither here nor there. Just a curiosity. Mine is Rival too and have had it for at least 20 years.

    I have a Crock Pot "The Original Slow Cooker" (it says so on the machine!) which has a removable ceramic crock. It came with a "mini dipper" (does not have a removable crock). I got it from Sam's Club a year or two ago and have been pleased with it. I saw one at Sam's the other day, also with the mini dipper but with a digital display for $35.

    I'm not a member of Heat in the Kitchen so I can't comment, but I did read what Good4U (Joce) wrote and wanted to add that my slow cooker does have an internal timer and you can set it for 4 or 6 hours high or 8 or 10 hours low and once the cooking time you selected ends it turns to warm. It's an oval shape like hers. The mini doesn't have any settings, you just plug it in and wait for it to warm up. So far, I've only used it to warm dips & keep them warm for parties. I know there are other uses for it but haven't explored much beyond that.
