Garlic Soup by Good4U

    Holy Garlic Batman! This is amazing! Ever since Joce posted this recipe I've had my eye on it. We're getting cool Fall days here now in the Ottawa Valley and today was the day to give this recipe a go!
    Dynamite Garlic Soup
    I used 1/4 cup of minced garlic from a jar and only 6 cups of homemade chicken stock as I like a bit thicker soup. I used four slices of Dempster Whole Wheat bread cut into cubes and left the crusts on. (Mom always said to eat my crusts!) I did not add the eggs at the end. I tasted it once I had used the immersion blender and I loved it so decided to stop there. Someone recently on ODD had suggested using a flavoured/spicy oil swirl in soups and I think that would go fantastically with this one.
    It has a deep garlic flavour. REALLY YUMMY! Made enough that I am going to freeze some and pull it out to serve on Halloween night to ward off those pesky Vampires! :)

    Garlic soup! I don't think I've ever heard of that before. I certainly have never heard of putting eggs in a soup at the end. That's pretty interesting! I love the picture.

    I suppose I am so used to tempering eggs in hot liquids to avoid scrambling the eggs. I have now modified the recipe so people will avoid doing just that! Thanks for mentioning it:)

    This is an awesome sounding recipe!!! Love the egg idea...I had no idea you could just thicken a soup with them! When I first read the recipe I was thinking it would be scrambled eggs in soup! Glad you cleared that one up for us :)
