Hot Macaroni Creole

    This is a tamed down version of a creole dish. And it doesn't have the holy trinity of veggies for creole cooking, which are, peppers, onions, and celery. The 'zuke and eggplant was nice but could have added the onions and celery.
    Also this didn't have any Creole seasoning in the mix and I couldn't find any Creole foods or seasonings here at GR. So I went looking elsewhere and found Emerils Creole Seasoning which I thought to share with GR.
    Put 1 tablespoon of the seasoning into the veggie mix after it was done simmering. Think that helped the flavor on a lot.
    Doubled the recipe ( which meant 2 tablespoons of the seasoning) which fit nicely into a 10x15 casserole dish.
    Dish could use more salt too.
    Dish calls for 1/2 cup oil for the veggie saute. Just couldn't make myself put 1 cup oil in the saute when I doubled the recipe. So just left it at 1/2 cup.

    I know Creole and Cajun seasonings are very generic and have lots of variations/possibilities/ .... glad you added yours to the site! Well, Emerils, but I meant the one you used.

I can't eat bell peppers anymore, unfortunately, so I have to leave them out when I make Creole & Cajun dishes. It's strange you couldn't find the Creole seasoning recipes when you searched here. I posted Creole Seasoning Blend a while back and Elgourmand posted Creole Seasoning just a week ago.
