    Irish Beef Stew With Guinness
This was so good! I don't know if I had two pounds of beef because I had some home grown sirloin from a rancher friend of our family and the weight wasn't marked. Cubed it up and I used an equal amount of potatoes as the cut up meat. I just threw in a handful of baby carrots and didn't bother to measure. I'm pretty convinced Griz meant 1-1/4 cup of beef stock - not just 1/4 cup. Good stuff. Made some dumplings from scratch to go with it. Out of Bisquick. Bought pancake mix by mistake and I don't eat pancakes. Geez.

That looks really good! I have a couple bottles of Guinness that a guest left and this looks like the perfect way to put them to use!

Yes, I did. When I realized I had no Bisquick, I pulled out my old 1950's original Betty Crocker cookbook and asked Betty what to do. She said 10 minutes with the lid off and then 10 with the lid on. They were perfect. I just have to have dumplings with stew so I was glad I managed to have some milk in the house! Used Betty's recipe, too.
