    Jetts Bourbon Marinated Salmon
The minute I saw this I knew I wanted to try. This is some seriously good salmon! I had one fillet for me, so I cut the marinade in half. I had plenty to pour on during cooking which I did every 15 minutes or so. There is a perfect balance of bourbon and sweet going on here. I absolutely loved it. It looked like it was done at 30 minutes but I gave it five more to caramelize it up a bit. Poured some of the marinade that was left on the foil over it when it was done. Ate a lot more than I should have, although I still have bit left for breakfast. A really great salmon recipe.

I made this for dinner earlier this week. I didn't have much marinade time so cooked the salmon in all the liquid hoping that might make up for it. It was very tasty but I want to try it again with the proper marinating time. I also used fresh grated ginger. Thanks for sharing, Jett! Sorry no pic this time.

    Frankieanne, lovely photo!

I finally had a chance to make this. Salmon was on sale so I loaded up. This was excellent. I wish I had made 2....not for left overs. Just 2 for dinner. Great, simple, and quick. I meant to have it last night, but saw that the recipe called for a 3 hour or more marinade time. So, it marinaded over night. Oh, and I also made it in a toaster oven. I LOVED this. Thanks, Jett for a great recipe

Wow, your picture is gorgeous, MrP. I read a blog a while ago written by a guy who cooked his salmon in a toaster oven all the time and he had a technique he wrote out. Can't remember if it was an apartment living blog or a cooking blog. Its was pretty interesting. It must work! :)

Thanks peoples. Frankie, I have been trying all kinds of things in the toaster oven. First time with salmon and it came out great. I was afraid I was going to over cook it. I did mine for about 38 minutes total by the time I took it out. Set the timer to remind me every 7 minutes to baste with a total 35 minute timer.
ML2C, it was only a 3/4lb filet.......Did I eat it all? Ummmm, NO? Yeh, why wouldnt I? I rather not have left over salmon. It seems to get dry when re-heated.

I thought Texans ate big???? I mean whats with the big ole super thick texas toast? Is 1 piece supposed to feed a family of 4 : )
