Keni's Slow Cooker Chipotle Pulled Pork

    Tonight I got to use the remainder of the can of chipotle peppers from the other night in Keni's pulled pork recipe. Now I'm only cooking for two during the week, but still like to have left-overs for the noon meals of the next day, or even two. But obviously, 6 pounds of loin would be too much, so I reduced that and everything else accordingly. However, I didn't reduce the chipotle quite enough and ended up with it on the high end of Keni's heat range of this recipe. Maybe even more. It was my mistake.

    But all was not lost. The first time I did chipotle peppers a few days ago, my missus didn't like the heat with the smoke and today, she loved the flavor, just too much heat for her. Even though I was over Keni's recommendation on the heat, I really liked it in this dish. The heat was right for me.

    When I bought a few groceries yesterday, I noticed the store had replaced the chipotle cans I had bought with new, clean cans. I suppose that means they plan on keeping them stocked. I think this chipotle adventure can be a great one. I automatically think ribs & hot wings, but I think there can be so much more.

    Your missus heat level sounds about the same as mine. That's the nice thing about the chipotles - you can adjust them to your taste.
    I'll be looking forward the the new chipotle dish, Ms. Keni. :)

    I needed something for a super busy evening that was quick to throw together as well. Man this is some good pulled pork! I was worried about the molasses, as I like molasses in cookies, but not in BBQ sauce so much. Those are the only 2 things I have ever used molasses in. It was very mellow in this, and added a nice sweetness along with the honey. Did not add in the sugar and honestly I don't think I'd recommend it, it was nicely sweet on it's own. I was not home to do the lid off stirring part, so skipped it and I think it was just fine. I did turn the crock up to high when I left home about 2 hours before returning, hoping it would help to thicken. It may have worked? Anyway, highly recommend!

    I needed something to bulk the taco up some since it was in lettuce wraps. I thought the carrot, radishes and onion were perfect! I forgot to say I successfully used 6 boneless pork chops equaling 3 lb. so I halved everything but the can of tomatoes, just used the whole thing. Used fire roasted tomatoes :)
