I love KFC biscuits. These are not KFC biscuits. However, they have a tender crumb and good flavor. That's as far as I will go.
Could get only 1/2" rise at the most out of the tallest biscuit. That's not doubling in height which is a hallmark of a good biscuit.
One would be better served to use the Bisquick biscuit mix straight up. Bisquick Biscuit Mix which is used in this recipe as a starting point.
For full disclosure I did use powdered buttermilk. I will be willing to try this recipe one more time using the real thing, but I have never had a failed attempt when baking with powdered buttermilk before.
One more thing to point out. The recipe spec's out 7/8 cup of shortening then says to only use 1/2 cup. Kind of strange.

I took a look at that when it was posted. I thought the club soda was an interesting ingredient but was confused by the 7/8 cup of shortening. How do you measure that anyway? They do look tasty though. KFC biscuits are very good!

I guess you would measure pretty darn close to a cup! I like the powdered buttermilk too...ran out of it recently, need to get more. Isn't KFC the one who puts honey on their biscuits? Or is that Popeye's, or Church's?

Tried again, this time with liquid buttermilk. Same result as last time.
Only reason I'd make these again is if I needed to increase my shortening intake since it almost doubles what is in the Bisquick mix.

I think the club soda in this recipe could be subbed out for any carbonated soft drink. It's the extra carbon dioxide which helps with the lift. The club soda for a neutral flavor. Should work with any biscuit recipe.
