    Laurieg's Laughing Cow Stuffed Peppers
    are awesome!!

    She told us about the recipe in ODD months, if not longer, before she posted it! We've been after her for a while, now. lol

    These are FANTASTIC! I make them all the time, and have made them for dinner guests, too. Everyone loves them. I use the sweet mini peppers because I'm a wimp, and there is no heat at all. I use the light Laughing Cow cheese, and have used a variety of flavors. It's always good. The cheese is really soft, so it can get a little messy. I have started putting the cheese in the freezer a little while before I'm ready to stuff the peppers, and that helps with that part of it, but totally not necessary. I think most of us in ODD have made these at one time or another...always with great reviews. So, thought I'd go ahead and post it in here.

    Indeed.....I've made this recipe a couple of times before too and it's really good. It looks fancy so makes a nice appetizer but they're really easy and not bad for you which is always nice! :)

    I've seen and gotten those little mini sweet peppers at Sams. I've never personally had the laughing cow cheese but my daughter loves the stuff spread on crackers! Bet she would love these too!

    These are so addictive! I only made 6 and used 2 wedges of cheese. I used one wedge of French Onion and one wedge of Creamy Swiss. The Creamy Swiss was my favorite. My husband tried a bite and said to make these the next time he has the grill going and he'll cook some up that way for appy's. I ate mine for lunch along with a salad. It's amazing how low in calories these are and they really don't taste it! Thanks Laurie, added my pic :)

    I'm glad everyone is enjoying them. I ate them so much when if first made them that I got sick of them for awhile. If you have any leftovers they are great sliced up in scrambled eggs.
