Lemon, Rosemary, & Thyme Roasted Chicken

    There are some recipes that drive me crazy when they don't have the amounts of each item listed, but with this recipe it didn't bother me one bit. I just added what looked good for my size chicken (3.2 lbs). I used fresh rosemary and parsley but dried thyme. Used chili powder in place of the red pepper flakes. Ghee is Paleo friendly so I used just a small amount to get the bird basted once about 20 mins. before it was done. The skin was perfectly crispy! Oh I also did the oil rub under the skin as well as on top. This was delicious!

    You have a rotisserie too if I remember correctly Frankieanne so this would work perfectly on that I bet. I like cooking up a whole chicken and even if we don't eat it all the chicken meat freezes so nicely for future dinners (enchiladas, hot chicken,etc.) plus then I can make stock out of the bones.

    Have you tried making your own chipotle powder? Chipotle is dried roasted (or not) jalapenos. You can make it loosely by using my recipe Ancho Chile Powder

    Sorry, pso, but I figure by the time I buy all the ingredients and take the time to mix them all together, it seems it is cheaper (for me) to buy the pre-made. I work and I figure my time is money. No offense meant to anyone. That is just what works best for me. Plus, I don't like working with chilis of any kind. They scare me. :)
