Monterrey Chicken

    Serious eats here! A wonderful sweetness mixed with savory.
    Cut my chicken breasts into 1/3 and 2/3 pieces horizontally and pounded to an even thickness so they would all cook at the same rate.
    There is plenty of honey mustard marinate and plenty of bacon cheese mix.
    All came out exactly to spec. Don't have a grill so I did mine under the broiler set on 400F and on the second rung from the top. I used Pico De Gallo by Zena824. It's good too. Only used one Jalapeno in it to pare the heat down.
    It's a surprise in the mouth to someone not expecting a cold sauce with the warm chicken but it pairs nicely. Well done Karynb!

    Technique note: Broiled onion slices and breast fillets on a cooling rack placed inside a lipped baking sheet. Parchment paper on the baking sheet makes for easier clean-up.
