    My Boston Baked Beans

    I have been wanting to try baked beans for a long time and this recipe sounded easy enough, though delicious, for a first time.

    Last saturday night put my beans to soak - had to google navy beans and learned a bit more of US history (thanks Patrick) - "The navy bean got its current popular name because it was a staple food of the United States Navy in the early 20th century. These small white beans are perfect for making baked beans."
    Then dedicated my Sunday to the beans and to sausage making. ยด
    These beans are AMAZING. So tender and full of flavour! They are absolutely worth the baking wait time.
    I used 3 cloves of garlic (mine were quite small) and added a dash of liquid smoke. Used salted pork instead of bacon as suggested.

    This recipe makes a lot which is great! I had to freeze some portions. So, next time I crave baked beans I don't have to wait a day to eat them ;)

    Homemade sausage? Sounds like that would be good with these beans!

    A flavorful pot o' beans. I brined the beans overnight. It helped with the flavor and cooking time. Dish was done in 4 hours. Maybe it could have been done sooner. That's the time I set on the clock for first check. Still a little bit of liquid left in the pot but that could be because of my technique resulting in the shorter bake time. I'm now satisfied that brining is the way to go with beans.
    Drained off the pot liker. It's not going to go to waste.
    Three tablespoons of table salt in a gallon of water to the beans for an overnight brine soak.
