    Recipe by PongoUSA: Oven Roasted Chili Cumin Fries
    Will have to dial the heat back some if there is a next time. I used 6 medium russets to try to cut the heat in anticipation. Used a creamy buttermilk dipping sauce. With both of those changes it still had too much heat for me.
    Fries didn't survive to the picture stage. I was too ravished.

    Sorry, P7O, to hear that. Spiciness is really hard to judge, one person's mouth is burning, an other won't even notice. I have trained my family to eat spicier food over the last 10 oe 12 years, we all like it hot now ;) If the dish is too spicy, use a less hot chile powder or just sweet paprika.

    I agree. It's very subjective. A blend of paprika would be a viable alternative. Didn't know there were various heats of chili powder. Nowhere I have ever been has given a choice of degrees of chili powder. It is what it is, in the stores, although I have never actually researched to find if a difference exists.
    Lately I find myself making recipes with chili powder and I find myself having to dial in the heat level. There is an upcoming enchilada sauce that I know is going to be too hot, I think, already. I have plans to dial it back by half. But it is made in such a way that I can sample and dial up the heat if found lacking. Wish it could have been done that way here.
