Paddys BIG Italian Meatballs from PKUSMC

  • lovebreezy 12 years ago
I was surprised how good these were. Not that I think PKUSMC is a bad cook, but rather that I grew up on my daddy’s firehouse spaghetti & meatballs and didn’t think there was anything that could compare. These are packed loose and oven cooked compared to the firehouse ones that are firmly packed and pan fried. Sorry pop, but even when I use your recipe, I will loose pack, oven bake them. Both versions are good, yet different so I will be using both recipes in the future.
I did make a change to Paddys Big Italian Meatballs. I used finely diced fresh onion and finely dice fresh garlic as I don’t have them in powdered form. I’m not convinced that the breadcrumbs needed to be specifically Italian bread but I had it so... The meatballs are good and I received many compliments. Photos added.

This looks like a great recipe, Lovebreezy. Excellent pic. I have yet to make meatballs. Thanks for the heads up. The only thing I dont have is the Italian bread.......

That is delicious looking! And those are some big meatballs. Ever since I found out about baking meatballs, I don't pan fry anymore either. Its so much easier to bake them. Thanks for showing us.

Thanks all. This is the first time I was able to take a photo with natural daylight--it sure makes a difference. I'm such a nightowl that we hardly ever eat during the daytime.

Awesome, breezy... you made his day! I had seen the post in passing, yesterday, and I got a text from him all giddy that you'd made AND liked it! hehehe

And, as the others...baked meatballs are the only way I go, now. Well, other than cooking lean meatballs right in a soup.... that's it's own kind of yumminess, too! I never fry them, anymore, though. I love the texture, flavor and ease of oven baking.

The natural daylight does make a difference, doesn't it. And I like your red and white theme with your Italian meatball sandwich. It fits perfectly. Its a really great photo.

Well Keni, you just made my day by telling me about PK, thanks.
Frankie, I've discovered that I need to pick up some more tea towels as I seem to use the same ones over and over in photos. I had a vase of flowers that I took outside to take a photo of too. Boy, my hermit ways will have to change.

I'm glad... he was really excited. He's got a new job which is making him much happier, but less available for GR, but he did see that you made this one. He's really just a ginormous sweet goofball, so you really DID make him giddy! hehe

As for the pics... I'm with you on the natural light, thing. I have windows galore in my house, and never thought it lacked for light....til I started taking food pics. In the morning, my kitchen is flooding with light, but, I have trees all over and it's all broken up by leaf shadows. It suits me just fine, but it doesnt' make for easy pic taking! And, like you, most of my cooking is done later in the day, at least the photographing is, so I gotta make due with indoor lighting.

On the rare occasion, like today, I get one taken indoors, and, of course, I get more comments on the photo...grrr! hehe
