Pecan Puffs

    Recipe by Good4U: Pecan Puffs/saved
    A nice treat that crumbles in your mouth when munched. It requires a little sip of something to get the chewing started, otherwise it is dry and powdery and will stick to the roof of your mouth.
    I made these with cake flour. The recipe didn't say, so I assumed cake flour. Please let me know if it is supposed to be all-purpose flour.
    Two of them blew up on me as I was trying to get them off the baking sheet.
    There is considerable work involved getting the flour and nuts to incorporate into the butter, but it will. Persevere!
    Don't think these will freeze well, so this is a trial run for the Christmas dinner. I'll make them again the night before the dinner.

They keep beautifully in an air tight container for a good length of time. They never stayed around long enough to spoil. Only trouble we had was in Florida, the humidity would make the icing sugar melt and they would stick together. Solved that by storing between sheets of wax paper and not stacking close together and keeping them air tight...no wimpy plastic. Mom used real cookie tins. Love love love these cookies and the memories too.

I normally use AP flour though. They are a short bread so they get better with age. They don't need to be frozen if put in a container will keep for quite some time like months. Even though I have to admit. I have never had to freeze them. I find the softer the butter is the better. Which I should also mention. The heat from your hands also helps incorporate the nuts in when rolling them into little balls. I also should note I do two batches at a time. Yes there is a bit of technique involved but well worth the trouble. I have made these for way over 45 years and still use my Grandmother's grinder for the nuts. She made these with love. So did my Mom and I do to.:-) I hope I have answered your question?

    OK AP flour it is for the next batch. I've a couple red tins that will fit at least 4 dozen each. I cut the dough ball in half 3 times to make 8 pieces which are rolled up into short fat snakes and divided by 3 each to make 2 dozen cookies rolled up into balls again.
    I'm wondering if I can change the extract flavorings to make different tastes, like almond or rum or banana or butter or maple.

    Made the first batch with rum extract. Haven't sampled them yet. Saving the sampling for Christmas dinner. Used a teaspoon plus a couple of drops to finish off the extract bottle.

    Second batch is done. Used 2 teaspoons maple flavoring. That second teaspoon makes all the difference in workability. Dough comes together with a whole lot less work and the balls do not relax and spread out as I was afearing. The extra flavoring should kick up the cookie an notch. As in the last batch, well see about the reports after Christmas dinner. All four dozen cookie balls fit in one tin of three layers separated by wax paper.

    No. Actually I don't know what the test is for doneness. (If you press on one and it shatters, it's done?) I'm thinking it's more of a drying process than a baking one. Butter and extracts are the only wet ingredients. Nothing in the recipe says to check for browning. Forgot to mention that I added just a pinch of salt.

    I don't think a pinch of salt would hurt. Never done it though. I did some more changes in the instructions. I have been doing this off an old recipe card with nothing but the ingredients and limited instructions. I am guessing you are correct on the drying process? I did mention now, not to let them brown. Only a pale yellow colour and very lightly browned on the bottom. More of an eye balling thing. Before having a timer I have browned them by mistake!!! Thanks for helping me get the directions down properly. You have been more than helpful.:-)

    AP flour did help the cookies stay together better and not poof into flour when bitten. Three layers of cookies in the tin for the Christmas party. Only one layer was consumed. Both flavors of the cookie, rum and maple, were lightly present before one was concerned with chewing the nut pieces. We'll have these to munch on for over the holidays.

    I have now removed the cake flour completely from this post. It quite explains why they were rather fragile several years ago!!!
