You know my penchant for Potato Chips! :) And back awhile ago when we were on a Potato Chip recipe marathon I spotted this one as well:

Potato Chip Crab Cakes

Made it yesterday along with some soup for lunch. A nice addition to a light lunch. My cans of crab were only 4 oz. once drained so I used two and slightly increased the rest of the ingredients accordingly.
I enjoyed the addition of the coconut and the coriander.
It was nice. I haven't made a lot of crab cakes. Almost think it'd be even nicer with some sort of dipping sauce.

The potato chips worked well in this Marie, and you couldn't really taste them. Maybe they added a bit of sweetness? Horseradish sauce sounds super yummy although I wonder if that would go with the coconut? Maybe some chutney? Thai sweet chili sauce? Now I'm getting hungry. :)
