Roast Chicken With Balsamic Gravy

    I never thought chicken, butter, salt and pepper could smell so delicious roasting in the oven! I was so tempted to add an herb or two, but did not and it was perfect as is. Janet had warned me the sauce may need some adjusting, but it turned out fantastic. I dipped my broccoli in it too and had to be careful not to use up all the sauce so that Michael will have some for his chicken tomorrow night at work :) I adjusted the sauce to about half what the recipe called for, my chicken was little...

    I am so pleased you liked the recipe Michelle! Did you use a rack when you roasted your chicken? I think you could totally add some herbs in and it'd be even yummier. That's a good idea really. I bet some fresh thyme would be nice. I like the gravy over mashed potatoes too. :)

    Your welcome Janet!! If I had a roasting rack I would have used it, but no, just directly in a baking pan :) That gravy would be good on almost anything!!
    Frankie I have homemade stock but this time I had stored them in 4 cup increments in the freezer and didn't know if I'd get around to using the rest before it went bad. The canned worked out fine...

    Took a pic of the whole chicken while it was roasted brown and beautiful. Parted the chicken out before I took a good look at the pics. The pic of the whole chicken was too blurry to post. All the rest came out OK.
