Shine's Thick and Chewy Double Chocolate With Chocolate Chip Cookies

I tried Shine's cookie yesterday, and it was phenomenal! If you like chocolate, you will love these. They are moist (probably due to the melted semi-sweet chocolate stirred into the dough). The addition of Dutch processed dark cocoa and the chocolate chips (I used milk chocolate) really gives the cookie a chocolate "buzz"! The only addition was that I added about 1/2 package of white chocolate chips because I wanted to use them up. At 10 minutes, the cookies were just right in my oven - still soft and slightly under-baked, with a gooey chewy middle and a bit of a crunchy edging. This one is a keeper and will be made often here - great cookie with a tall glass of milk!

I totaly agree with you, Krum. I have made Ray's cookies three times and people love them. They are very chocolate-y and delicious. I made them exactly as his recipe states twice and I also added about a cup of white baking chips the last time for the same reason you did...to finish them out. I also love that little espresso kick in them.

I did ship them successfully last year - wrapped inside a lidded plastic container - and the lid taped down. Then packed in a box with lots of buffer packing. They arrived fresh and intact....and gratefully received.

There are actually two posted recipes for these cookies. One being the original from Shine: Thick And Chewy Double Chocolate Plus Chocolate Chips Cookies and the other giving kudos to the original from Krumkake: Shines Thick And Chewy Double Chocolate Plus Chocolate Chips Cookie . So the second one is sort-of a review of the first.
There are reviews on both recipes but since they both refer to the original submitted one from Shine, I will group them together here.
