So we had a family BBQ to get to this past weekend and I was told to bring cookies! Went to my bookmarks and saw this one I had saved forever ago....
I figured when it said semi sweet chocolate, chopped it had meant the bakers chocolate, but all I had was semi sweet chips, so I used those and cheated by microwaving it and stirring until melted instead of using the double broiler method, just to save some time...which for me worked out great!
Don't be scared of the coffee adding too much of a coffee flavor, you can't taste it, but it makes the chocolate taste more rich, I think...anyway, these are SO GOOD! They bake up nicely and like the title says, they have a great chew to them. They were all gone, none to take home :(

Thanks Marie, I have only baked with coffee being in the ingredients a couple of times, but noticed it really enhances the main flavors so much! Love it as an addition, even if the little one's are like "ewwww," as I add it lol! They never seem to complain afterward ;)

Those look very tasty, ml2c. I've used coffee in something but I can't remember what right now. Sounds like they are a keeper if there weren't any left!

Did it work? Were they spent by time ya got em home? I know when I become a grandparent I will send my grand kids home completely wired. Especially my sons kids when and if he has them. He has a ton of pay back owed to him. He was my mom payback to me. I know I ran her ragged. Always had a ton of energy as a kid

So the second one is sort-of a review of the first.
There are reviews on both recipes but since they both refer to the original submitted one from Shine, I will group them together here.
