    Recipe by Chefjeb: Southern Cat Head Biscuits
    It's a good biscuit but I'm just not used to a 2" biscuit. It has good flavor and lots of rise. Some of them rose so much they fell over. Think a 3" cut would have prevented that. Recipe is spot on for accuracy.

    2 inch aren't catheads .... which are named for their size ... so, yeah, if you're gonna cut 'em, for sure I'd go with at least a 3 inch cut.

    We just drop our biscuits, catheads or not, anyway ... so no need to cut 'em.

    Forgot to mention I used King Arthur's Baker's Special dry milk and water as a sub for the milk as I'm temporarily out of wet milk. Might have something to do with how they rose.

    There are enzymes in liquid milk that break down gluten structure in baked goods. Baker's Special dry milk is processed at a higher temperature to kill those enzymes and promote better rise in baked goods. Wet milk can be elevated to over 180F but below boiling and held for one minute to kill those enzymes too.
