Spaghetti Squash and White Bean Provencal

  • otterpond 15 years ago
I made Ruskin Girl's recipe this evening and it its really marvelous. I was pretty true to her recipe but because I had a chicken breast laying around it needed to go in the pot. Because of the chicken I eliminated 1 of the 2 cans of beans.

When I make spaghetti squash I do it in the microwave to save prep time. I have seen no bad things about doing it this way and recommend it.

Wash the squash, cut it in half, scoop out the seeds. Place the halves flesh side down in a glass dish, put several slits in the gourd and microwave on high for 8 minutes.

I looked at that recipe, sounds really good! I love spaghetti squash, and this one has nice additions of beans and olives. Will definitely try, thanks for showing this here, Otter! So, how DO you count the nutrition info?

I am a member of StartYourDiet.com This site has a database of ingredients that have nutrition info attached. You can also add additional ingredients which can be shared or kept to yourself. So if I use Publix brand yogurt and can enter that particular item with its nutrition info etc.

This is a diet and exercise site. So another part of the site includes the ability to play your meals. For a meal you add the ingredients, and quantity of that ingredient in a list. The program calculates the calories, carbs, fat, protein and fiber.

I use the planning section to develop recipes instead of a single meal. I then name the recipe and add it to the SYD shared recipes database. I can select any item and then add it to my "favorites" which I use to track my meals. This way I can add a single item for a meal instead of a long laundry list.

This was really what got me into cooking. From SYD I got linked to GroupRecipes and now I use GroupRecipes to search by ingredient to build new stuff from whats in my pantry. Unfortunately the SYD site doesn't not have an easy way to link a recipe inside of our diet blogs. I use my SYD blog to share information with other SYD'rs. I always link recipes from my blog to GroupRecipes.com for ease of access.

If you are interested, here is a link to my blog for an example. This is a pay for account to use all the tools I have described but it is only $25 a year. This has been a great value to me.

Oh... so thats how you get the nutritional facts! I was wondering the same thing! I always have to figure them out myself by reading all the ingredients I put in a recipe and then using a calculator to add it all up! Your way sounds so much better! I would probably only need to use that site for the nutritional calculations. Would it still cost me $25 a year for that?

That is one of the side features of the site. There must be other places that do the same thing. I know there is on WeightWatchers.com but that is $65 / year. I saw something like it on livestrong.com but it didn't really let you collect a list and then add all the stuff up. I still use livestrong.com for good source of where to find nutrition info though.

You should be able to build yourself a spreadsheet to do the calculations and every time you use a new ingredient it can be added to the list. Before you know it you'll have a very nice auto calculator that all you'll have to do is input the amounts.

Yeah but there are sooooo many ingredients so having someone that has already collected them is a good thing.

Some of the recipe softwares we have been discussing in another group will do that for you. I have been playing with the free trial version of The Living Cookbook. Once you have input the ingredients, it calculates it all out for you and puts it on your recipe.... Kind of cool......... ;-)~

I saw a commercial on TV the other day that advertised a cell phone with options to do that! Couldn't believe it, they are making those more and more fancy!

I just finished making this again. Dad was hinting broadly that it would be welcome for dinner tonight. I added a picture this time.

I just went and looked up Living Cookbook. That sounds really neat. Pretty cheap at $35 for all that it does.
