Spicy Thai Shrimp With Coconut Dip

Made another one of Janet's! This turned out and tasted exactly as I had imagined, delicious! I could not find the red chile pepper so I just used a serrano. The coconut dipping sauce is SO GOOD! The whole time I was eating it, I was thinking about how good of a marinade it would be for chicken. I may try that! I did grill these just because it was beautiful outside and why not? I did kind of regret making that decision when my allergies kicked up from the pollen, oh well! Served this as dinner with some veggie skewers (sorry about all the veggies taking over the picture Janet :) but I definitely will be making these as an appy for a get together, I know my whole family will love them!

Your picture is beautiful Michelle. And if nothing else, all those vegetables do add colour. :) (It's the zucchini mostly that gives me the heebies)
And you've got a great idea alright about switching out the shrimp with chicken. I should try that myself.
    Thanks for the nice review!
And oh.....Joce, Marie and Frankieanne....I'm remembering (for the time being anyway) to add my recipes to the IMI group without any gentle prodding. :) Quite proud of myself! :)

Thank you ladies :) Coconut milk is delicious FA, it really doesn't give off a strong coconut flavor like you'd think. My husband likes it and he's a coconut hater :P

I can take or leave coconut. Its pretty rare I seek something out with it in it so that is good to know about the coconut milk!
