Spinach Quiche-The Best Ever

    I thought this was great! My egg loving little boy devoured a huge piece of this and I got that zucchini into his belly too without him knowing ;) This set up very nicely, the only thing I must say is that if you like your onions soft be sure to saute them some before adding them to the quiche, because they do come out slightly crunchy if not. I'm definitely putting this on my Christmas brunch list for this year!

    That looks so pretty. I'm not a fan of feta though. I've heard of Swiss in a quiche. I wonder if that would work...

    Swiss would work great Frankie or in this recipe you could just omit the feta and use extra of the mozzarella and parm.
