    !!!VELVEETA ALERT!!! --- !!!VELVEETA ALERT!!!
    Nothing like fattening up a veggie casserole!
    Used VERY LARGE yellow squash. Fit into a 9x13 casserole dish.
    Liked the texture of the large chunked squash.
    Thought 2 cups crushed Ritz was a little excessive but went ahead and did it because of the 1/4c butter stirred in. More butter or less crackers is the ticket!
    Takes a little more than a dash of seasonings.
    I liked it. We'll see how mother fares with it after church.

    Two helpings for her. Must mean it's good.

    I did it as a main course. Very rich with all that cheese spread in it.

    Instructions doesn't say this clearly but infers to lay down half the squash mix then the cheese spread then the other half of the squash mix.

    Made this again using 6 medium yellow squash. Fit into a 7x11 casserole.
    Only used 1 cup Ritz crackers but kept the butter the same.
    Could have used more squash, as the Velveeta is quite predominate this time.
