Sunshine Chicken Thighs

    This had so much more flavor than I had expected! I rubbed the spice onto the skin as well as under the skin. I don't eat the skin, so i wanna taste that spice rub! I feel you MUST do the optional: Smash that garlic and drizzle the chicken with the juices at the end. This pan juice is loaded with flavor, tons!

    Think the drippings have way too much fat rendering.
    I think a good alternative is to take the skin off. It doesn't crisp up anyhoo. And that would let me get the rub right on the meat of the matter.
    Also think cutting a slit in the meat to insert a smashed garlic clove will fit the bill.
    Be careful or you'll get yellow all over the place.
    Yeah, there is a lot of I think, I think, I thinks in here but there is also a lot of good flavor.
    Tripled the recipe without trouble.

    I didn't trim off any extra skin and fat from the thighs. Could be that's where a little extra fat rendering came from.

    Yours looks just like the original picture, pso. I guess I always decide skin off or skin on if there is a sauce that looks like it would be good on rice or something. If so, I take the skin off so I'm not pouring fat on my rice.
