    Swedish Meatballs Ci

    This recipe has already been reviewed. I brought it up again because I made it.

    Good flavor in the meatballs. Mine are too big. I have big fat fingers and can't make my balls 1". Baked through anyhow at 1 1/2" This recipe makes 44 balls at 1 1/2". Had to do them in two batches in my 10" saute skillet.

    Not sure I like the idea of dropping the mushrooms and onion on top of the balls when they are half way browned. Think it would be better to brown the balls then saute the onions and 'shrooms. Had a difficult time turning the balls. They kept on flipping back over onto the browned side.

    Poured the sauce over the balls then the half and half over the sauce. Thought I had the destructions memorized but apparently not. That made the sauce a little less thick but I think the pasta sucked up a lot of the cream. Didn't detract from the flavor at all.

    There was a couple of measurement mistakes in the recipe but Keni was Johnny-on-the-spot with the corrections.

    Would have made this with egg noodles but mother likes her thin spaghetti. Made and posted a pic.

    I am sorry about the errors, and also with the skillet information....I should amend that to a 12-14 inch skillet, then, I guess...

    but, it's a passing grade, and, from you, that's golden! :)

    Forgot to mention that I made it with freshly grated nutmeg. Didn't have to add any additional nutmeg. Freshly grated nutmeg imparts so much more flavor than that pre-ground stuff.

    I did double the sauce as recommended by a couple of the posters.

    Make a note in your recipe to use fresh grated nutmeg. I used 2 nuts. Worked out to be 4 teaspoons. Split it between the balls and sauce.
