Thai Corn Fritters

    Thai Corn Fritters
    as a side to Chicken Satay Skewers with a Peanut sauce for dinner last night. I haven't made too many fritters in my lifetime and certainly never a corn one. This one looked right up our alley with the Asian slant.
    Since corn is at its peak here now the corn was lovely and sweet. I was worried it wouldn't cook enough and be tender just frying them for two minutes on each side, but it was pretty near a perfect cook time. Loved the garlic, green onion, soya sauce and cilantro flavours. I didn't have a red or green thai chili on hand so subbed a tsp. of sriracha and it seemed to work in fine. Dipping the fritter in Thai sweet chili sauce was a lovely accompaniment.
    These tasted light and crispy and I'd make them again in a second. Since it was just the two of us I halved the recipe.....there were no leftovers. :)

    I've made something called a corn cake which is quite similar. Fresh corn, eggs, flour and a tad bit of sugar and then fried in canola oil. I certainly like the idea of the adds of the garlic and onions. It sounds yummy. Nice picture, too! :)
