    A really tasty dressing and not hard to make. I served mine over some butter lettuce - which cost the same as iceberg this week. What's up with that? Anyway - chopped up a few of the leftover beets for a topping and ate the rest of the can as a second course. Can't wait for this to chill because I bet it will be even better tomorrow.

    Sure looks pretty. If and when I eat salads, I love beets on them. And sunflower seeds. And bacon. Oh and croutons. And kidney beans, too. Cant forget red onions, either. And radishes. Heck, now I know why I dont eat them. Too much to get on a plate : )

    It is perfection in a bowl, but yes, it could be a bit of work!!!

    Made this like I said! I did make the gouda burgers for the family but didn't get a pic in cause they dug in to fast lol! I was gonna make the portobello burger for me but went to Sams and they only had baby ones....so I just bought those cut them thick and sauteed them up and threw those on ciabatta bread. I used fresh beets and just peeled, chopped and boiled them up in some water till tender. I realized when I got home I was out of mayo so I had a giant tub of Greek yogurt to use up which worked really well, and healthier too...yay!! Also, not in my pic, I topped with arugula. This was delicious and a great topper on my mushroom burger!

    I like canned beans, too. Black, kidney, cannellini... not green beans though.
