Tomato Basil And Mozzarella Frittata

    I was just going to scramble some eggs using tomatoes, basil and some cheese, but decided to come here and use the search by ingredients feature. This came up. I used regualr tomatoes, as the cherry tomatoes from the garden never seem to make it into the house. I also didnt cut up the basil. Until this recipe, I never even knew what a frittata was. This made a great lunch.

    Thanks, NP and Chuckie. Seems like I learn something new every time I come here. Like that there were filters on the right of the results of your search. I never even noticed that until you mentioned it FA. I just did another search and played around with the filters..........

    Oh, and I like your theory that cherry tomatoes are meant to be eaten outside. Makes me feel better. Each time I tell myself that I will bring a handful in for later and later becomes the walk back into the house : )

    When we grow cherry tomatoes we plant 3 plants and get hundreds of those little guys! Is that how many your eating outside lol!? I usually give a lot away to neighbors cause I can't keep up!

There a bajillion types of tomatoes. These dont grow in clusters. My other tomato plant does and I get about 2-3 a day. Never in the same cluster tho. I think that plant is a hybrid. A friend gave it to me and I cant remember what type it was. Next year I will plant an extra cherry and this other if I can find out what it is. I was never much of a tomato fan until I had one from a garden.....WHAT a difference

    No question. People who don't eat fresh tomatoes or at the very least vine ripened ones, can't honestly judge if they don't like those red lovelies. :)

    My garden has gotten smaller the last few years, but peppers, tomatoes, herbs, green onions and greens always make the cut!

    My favorites in the cherry tomato category is the cherry sweet 100's. They grow in clusters and produce a TON and they are super sweet and delicious. My second favorite small tomato category would be the pear shaped yellows. So good and bright yellow! I could keep going but I know I'd bore you lol! Oh and I don't mean I pick 100 every day, BUT I do pick about 20 to 40 a day...if I could eat that many outside I would, but too many raw tomatoes makes my tummy hurt!

All I know is that I need about 5 times the amount of space that I allotted this year. Didnt realize those plants got SO big. Both tomato plants are about 7' tall and take up 3' in diameter. I wont even say how much I allotted for the squash and zuke. Its been kind of fun tho : ) Doing peppers, beans and brussels, too. Next time going to add onions, garlic, artichokes, and cucumbers .Growing is a new experience for me. Always enjoy learnig.

Used 3 whole eggs and two egg whites. It makes a lot. My Mom couldn't finish her half. I'd serve this to three people for brekkie in future. I don't have a cast iron fry pan so just did it on the stovetop in a non-stick fry pan and used a lid. I probably threw on half a cup of cheese but a quarter cup would have been plenty. Thanks for pointing this out MrP. I'll add this to my summer breakfast rotation.
