Unique Crushed Oven Potatoes

Recipe by Marky90: Unique Crushed Oven Potatoes
A good excuse to put oil and seasonings on boiled potatoes. Very flavorful. Had a crusty crunchy crust if you bake them long enough. Mine took at least 25 minutes to start to color up. Used rosemary on a third, Cajun spice on a third, and tarragon on a third.
Liked the way the sea salt burst the flavor in your mouth.
No photo. Looked exactly like pic.

I've been making something similar to this for quite a while. I microwave a potato and smash it with a dessert/salad plate. Put it in a pan with some hot oil and fry for about 5 to 6 minutes each side until it gets crispy and season as desired. I love them and its a quick way to kinda fancy up a potato. Good with an egg on them for breakfast, too!

I make these too like Frankie by frying in a little oil. I like this oven method! Sounds healthier ;)

Luv, these look like those "Crash Hot Potatoes" that were all the rage on AR years ago... I think they came from that blog everyone was ga ga over... The Pioneer Woman?

Funny what the mind remembers, huh? ;-)

    None the less...they look yummy.

I can't remember where I saw them, but I know it was in a magazine. Your mind remembers better than mine, Keni. :)
I know in the magazine recipe, the potatoes were boiled but I'm always in a hurry. :P
