Vegetable Egg Rings

    I had to make this the second I saw it. Love me some runny eggs! Darnit though my lid wasn't tight fitting enough (okay so I used a plate) and my yolks were pretty much cooked through by the time my whites were done. My fault though. 5 stars for ease and idea! I really think this would work perfect with a tight lid. Served with some hash browns and some extra sauteed bell peppers and onions. Nice meal!

    Thanks! I do have a really good pan with a tight fitting lid but its BIG! I should have used it but wasn't looking forward to washing it!

    Nice pic ML2C! After your exuberant review I decided to whip one of these up for brekkie this morning. It was fun and easy, just as you said. At first I didn't do the add 'drops of water' thing and my egg seemed to be cooking/setting quite slowly...but once I added a dribble of water it set in no time to perfection. This would be a pretty dish to serve to company in the morning. Just dresses things up.

    Hey ML2C. Sorry. I have been MIA. Lot going on lately. I made these a while back for a quick snack. Great idea with good flavor. I also over cooked the yoke. I dont care for dry yokes but these were still good. I think next time I will keep the yoke separate and add to the tops just before removing. Dont know if that will help/work but gonna try. Any other ideas not to over cook them??? Added a pic.

    Did you do the water drops? Did you have a tight fitting lid? I think in this recipe you really need to do it correctly to get the perfect egg. I can't wait to make this again the right way to see if I can get it right. It is a fun little recipe though ;)

    I bought the roundest peppers I could find so there would be more room in each--hoping enough for 2 eggs. I should have cut them wider than ½” as they overflowed the ring. It really didn’t matter and still made it easier to cook for more than one person at a time by generally keeping the portions separated. Photo posted.
