How to make it

  • Cut ½″ slices of onion or pepper.
  • Place the rings in a large skillet over medium heat See Photo. Sauté the rings until some browning appears.
  • Turn the rings.
  • Gently drop an egg into each ring (break the eggs into individual ramekins, then gently pour into rings). See Photo
  • Sprinkle a few drops of water into pan and cover.
  • Cook until the egg is as done as you like.
  • Season with cracked pepper and sea salt.

    Easy and fun. Posted a photo showing what happens when you use two eggs with a 1/2" ring. Vegetable Egg Rings for more comments. I would make these again for a group but will try the onions next time. We were camping so no fancy garnish.

    How funny, I just saw this today at http://www.apronstringsblog.com/uncategorized/flower-power-eggs-recipe-sunny-side-up-eggs/. I have to say, they may not be as pretty but I like the onion idea better for personal taste.
