    Beautiful day in New England! Sunny,warm and low humidity.

    We are having pollo asada soft tacos with all the fixins tonight! Ole!!

    Making a tuna nicoise out of last night's leftovers. Butter lettuce, beans in vinaigrette, cherry tomatoes, black olives, tuna, hard cooked egg, cooked potatoes drizzled with same vinagrette with anchovies and chopped onions added to the mix. Garlic bread on the side. Might even melt a wedge of cheese in the oven to scrape over the bread.

    Saving the extra chicken meat for salad for lunches for the week. Going old school, mom's curried chicken salad with celery, pineapple, bananas (sliced at the last minute) and lots of chopped cashews. Haven't made it that way in a long time.

    Never got to those chicken quarters last night. Mr. SuchAFuss had burgers made for us instead. So I"m sure tonight is chicken night.

    Coffee-ing up for another garden marathon session. I'm determined to get that one bed under control this weekend. Cheer me on.

    The recipe makes 4 quarter cup (or one ladle) pancakes. Normally I could eat it all but I think my stomach has shrunken a little from my reduced eating load this past almost two weeks. Only finished half the recipe. So this afternoon after I get out in the vineyard for a while I'll have a little snack waiting for me.

    Think I have enough syrup left to do about two more batches of pancakes. That should carry me through Tuesdays dentist appointment.

Ended up hunting an open walk-in cinci for my daughter yesterday...she tells me she's not feeling well about 15 minutes after the one in our town closed...tells me she's felt like she had a bladder infection for 4 days...good grief! Spent all day finding one open that took our insurance, and then getting meds... grandkids coming today. Think we'll order a pizza! Have a great Sunday!

    Pancakes were very successful.....bacon was decadent. Used grade "B" maple syrup and brushed it on the bacon and baked it on a rack for 15 minutes, 350, flipped and baked some more until the smell drove us nuts.

    Broke down and peeled 2 bags of apples, sliced and stuffed them in the slowcooker. Last time I over did the cinnamon and overpowered the apples...so I took it easy today. Just buttered the inside liner, filled it full of apples and started it on low.

    Good luck on the gardening today. I'm on dog duty. So far, so good...no one is getting their nose out of joint.

    BEAUTEOUS DAY IN EAST TN!!! Cool and no humidity. Hubby's gone target practice shooting with his buddy today. I'm heading out to the garden to pick tomatoes. Going to throw them, garden onions, beef stock, noodles, spices and hamburger into some garden fresh pasta fagoule (sp) ---y'all know what I mean. LOL Some crusty bread he can pick up on his way home--and voila'! Garden 'mater stew, y'all! :-D

    I am using Sparow's Garlic and Cheese Crusted Rib Roast recipe on a shoulder pork butt roast. Just stuck it in the oven. This thing is 7 pounds so we might as well count on bbq sandwiches and tacos later this week. :)
    Have more cucumbers now so am making Wynne's Amish and Cucumber Salad. The full version. And maybe some fried zucc's and maters. I do mine with a bread crumb/parmesan coating kinda like the roast. Very good.
    And that's about all I've got so far.
    Hope everyone is getting to enjoy their nice weather Sunday. Not too hot and low humidity here also.

    I wish I felt as ambitious with the cooking! Ended up making 5thsister's Shrimp in Creamy Basil Sauce last night - was good. Brad said it was "kinda plain" LOL that's because he's so used to my spicy stuff! Told him next time I'd throw in some red pepper flakes for him!

    I had heard that about smokers healing differently too. Just because Fred smoked for 50 years and has had the heart bypass and his recovery was terribly slow at the time. The only thing I'm grateful for the stroke is that he is a non-smoker now. 17 months and after two packs a day for fifty years, this is a miracle.

    So, is everyone going to be watching to see if Debbie gets the boot tonight?

    Pat, have you posted your green tomato salsa? I make one with tomatillos that are roasted. How do you make yours?

    How did he quit, Tina?....Did the stroke just scare the crap out of him?......I've had 3 spontaneous lung collapses and if the doctor told me when I had the first one it was from smoking, I would have quit that day...but he didn't.....Finally had to have part of a lung removed and still smoke....and have COPD....Quitting is a b$tch.....My Bekah smokes and I made a deal with her while in CA. that if she quit, I would try to.....Well, she called me today and told me she quit on Friday......Gotta get my butt in gear and quit....Got a rx for Chantix and really gonna try!!!....Bring on the Twizzlers....Anyone else up for the challenge....Ang!!!!....LOL

    Before he left to get Lincoln a new "bed" (old blanket from our storage unit) I was blaming him for my back problem. Told him I wouldn't be lifting these heavy things if he didn't give me such a hard time by saying things like: "That's not that heavy" and "What?, you can't lift that?" He said that was b.s. to blame him and nice try. LOL

    Maybe I'll make steak nachos again, like last Monday. God knows we have enough of that meat leftover from the French dips! Yeah, that's the plan. I'll be able to use up one more tomato in some pico de gallo too.

    Wynne, the doctor had him on b12 shots daily and started him on the patch while in the hospital. I was supposed to wean him off with the step down nicotine patch. But along with his memory for anything else, he just forgot that he used to smoke. When he would get on the phone, his hand would reach for his pocket to light up what wasn't there and after a time, he just said, "no more patches" and no more smoking, I don't feel like it.

    Don't forget he had massive amounts of anti psychotics and antidepressants at the same time frame. He thought I was poisoning his food and stealing his money (what money????). He is more upset over the "no drinking" part. He can only have 2 beers a week, that is it and he gets really angry over it. That is his Trivia night treat, it isn't trying to play trivia, it is the $5.00 pitcher that holds his two glasses that he really wants.

    I know the feeling when the money gets too tight and you have to say "no." We skipped trivia last week and you wudda thunk the world was going to end. Don't call anything a leftover, tell the family you are recycling for the benefit of your wallet..
    I think Steak nachos is an inspired idea and quite tasty sounding.

    We have steak from last night- wanna do steak salads and then all this pork will surely work it's way into something. No ordering out for us for a while...did a couple of times when I was just fed up with it all, was not feeling well at the time..and well, you know.....now I'm back into the groove. Good feeling!

    Me? A smoker? nahhh, and I don't drink either! Not one drop! lol

    Y'all should taste this stuff. It is SO awesome. Hamburger, onions, lots of fresh tomatoes from the garden, spices, beef stock, and noodles. YUM!

I did have a cigarette or two that evening, along with some very good old scotch. My darling Daddy said, "I'd rather spend one weekend a month with this gold-digger than a week of Sundays with you."     Now, I used to enjoy a glass of wine a lot more when I had the money to spare a little, but these days, there is no fun in being a solitary drinker and the temptation is too great for Fred. I thought I had hidden my two buck Chuck from him and came home to find him thoroughly trashed and speaking complete gibberish. So, I'm just thinking that I'll save a bit of money now and buy him a little more time.

    And yes, I do believe it is six somewhere. Bottoms up. Go give your back a break sweetie.
