Favorite Salad?

    I love a Ceaser salad when I go out. Never have made one for myself at home.

    Thats my hubbys favorite salad and I have made one at home. But always seem to enjoy it more when I eat out. I can't quite say what my favorite salad is. I like so many. Sometimes just a garden salad with ranch dressing just hits the spot. Fresh and simple.

    Still haven't posted my 37 year old dressing made in a wooden bowl, with a coddled egg, the tableside Caesar...can't bring myself to measure what I do by feel. But, everyone loves that Caesar. And I love my ancient wooden bowl...it is so well seasoned, it is perfumed with garlic all on it's own.

    But if there is one salad that continues to befuddle me is a macaroni salad. I can't get them to have any flavor, they are always so bland and mushy. Give me a good potato salad over macaroni anytime.

    Far be it from me to give advice on macaroni salad. But your description makes me think the elbow macaroni is overcooked. Try cooking the pasta to the box spec's for al-dente, (I'm assuming here that you don't make fresh home made pasta) then rinse and wash the pasta in cold water to stop the cooking process. Then just a little oil or butter to keep the macaroni from sticking together. Personally I like all my pastas cooked past the al-dente state, so I cook mine twice what the box directions indicate. Maybe go with some other flavored salad dressing instead of using mayonaise or Miracle Whip. Maybe some crumbled Feta for a little zing.
    I have never made a macaroni salad, so blow up this message if you like.

Enlighten me, dear foodies, where have I gone wrong? An erstaz potato salad is not what I seek, but a flavorful pasta that stands alone.
