Ingredients
  • 1 boneless chicken breast- pounded thin and even
  • extra virgin olive oil
  • salt and freshly cracked black pepper
  • grape tomatoes- 1/2-ed
  • dijon mustard
  • juice of one lemon
  • capers

Directions
  1. Rinse and pat chicken dry.
  2. Drizzle with oil and salt and pepper on both sides.
  3. Cook in a hot pan until brown on both sides.
  4. Remove from pan and keep warm.
  5. In same pan, saute tomatoes with lemon juice and about 1 tbsp mustard until tomatoes soften,
  6. Add capers and taste. Adjust seasoning accordingly.
  7. Pour sauce over chicken and serve warm.
