PORK FROM ALGERIA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ellis Estate in Ennis, Texas in 1994.

Ingredients
  • 15 ounce can tomatoes
  • 1/3 cup creamy peanut butter
  • 1/2 cup water
  • 1 teaspoon chicken broth base
  • 1/2 cup thinly sliced white onion
  • 1 green pepper cut into thin strips
  • 8 ounces fresh mushrooms sliced
  • 1 tablespoon peanut oil
  • 3 teaspoons dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon garlic salt
  • 1/2 teaspoon chili oil
  • 2 pounds pork tenderloin

Directions
  1. Sauté onion, pepper and mushrooms in peanut oil and chili oil.
  2. Stir in oregano, red pepper, garlic and salt then sauté until crisp tender.
  3. Drain juice from tomatoes and combine juice, peanut butter, water and chicken broth base.
  4. Chop up tomatoes and combine into peanut butter/juice mixture.
  5. Put pork in baking dish then top with vegetables.
  6. Pour peanut butter tomato mixture over top then cover with foil and bake at 350 for 1-1/2 hours.
