  • 1 (15 1/2 oz.) can red kidney beans, rinsed and drained
  • 1 (15 oz.) can black beans, pinto beans, or great northern
  • beans, rinsed and drained
  • 3 c. water
  • 1 (14 1/2 oz.) can Mexican style stewed tomatoes
  • 1 (10 oz.) pkg. frozen whole kernel corn, thawed
  • 2 med. carrots, sliced (1 c.)
  • 1 lg. onion, chopped (1 c.)
  • 2 tbsp. instant beef or chicken bouillon granules or 6
  • bouillon cubes
  • 1 to 2 tsp. chili powder
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • (dumplings)
  • 2/3 c. all-purpose flour
  • 1/2 c. yellow cornmeal
  • 2 tsp. baking powder
  • Salt and pepper to taste
  • 2 beaten egg white
  • 4 tbsp. milk
  • 2 tbsp. cooking oil

Directions
  1. In a LARGE crockpot, combine canned beans,
  2. water, tomatoes, corn, carrot, onion, bouillon granules or cubes,
  3. chili powder and garlic. Cover and cook on low heat setting for 10 to 12
  4. hours or on high heat setting for 4 to 5 hours.
  5. For dumplings, in a medium mixing bowl stir together flour,
  6. cornmeal, baking powder, salt and pepper.
  7. In a medium mixing bowl, combine egg white, milk and oil.
  8. Add to flour mixture; stir with a fork just until combined.
  9. If soup was cooked on low heat setting, turn crockery cooker
  10. to high heat setting. Drop the dumpling mixture from a
  11. rounded teaspoon to make 8-12 mounds atop the soup. Cover;
  12. cook for 30 minutes more (do not lift cover). Makes 4 generous
  13. servings.
  14. NOTE: May add in 4 oz canned chili peppers if you like it hot.
  15. NOTE: May halve dumpling portions if you like fewer dumplings.
  16. NOTE: Be sure to let dumplings cook on HIGH and COVERED---do NOT open the lid early, or you will have a gooey mess in your crockpot, instead of dumplings, LOL
