How to make it

  • Combine 1 stick softened butter, mushrooms, garlic, Parmesan, basil, salt, pepper and juice from 1/2 lime and mix until thoroughly combined.
  • Lay chicken breasts out and place small amount of stuffing mixture toward one edge, and roll chicken over filling and continue to roll, securing with toothpicks along sides, and middle.
  • Add juice from other 1/2 of lime, salt, pepper, garlic powder and cayenne to melted butter.
  • Grill over medium heat, starting with seam side down to sear them closed. Baste with the butter/lime mixture while cooking, and flip once.
  • Cook until golden brown and temperature reaches 165.

    Hi Keni, I'm finally getting around to making this recipe for dinner. If I'd like to bake rather than grill, do you think that would work out OK? I was thinking 350 for about 30min?

    Keni, if I wanted to scale this down to use with say 3 breasts (halves) do you have any suggestions? Also, would lemon juice work okay?

    Picked this one up in a recipe swap and finally had a chance to make it tonight....Keni, this was DELICIOUS!! Followed recipe exactly (made one little change at the very end...will explain later!), and the flavor was phenomenal! The lime, parmesan, mushrooms, basil, garlic, cayenne came together so nicely - perfect balance! I had to use my stovetop grill pan and it worked fine - probably could have baked it, but I like the grill marks and the flavor. Now, my only change was this: I only had three chicken breasts so I had a scoop of the stuffing mixture leftover. I took some of the pan drippings from the chicken, the leftover stuffing mix, a little flour and some half & half (fat free, mind you...LOL!) and made a mushroom gravy. The stuffed chicken certainly did not need anything, but what the heck, I didn't want the ingredients to go to waste! Thanks Keni! This one is among my new favorites!
