Grilled Mahi Mahi with a Chunky Cucumber Cilantro Sauce

- !/2 medium cucumber shopping list
- 1/4 cup chopped green onions shopping list
- 1/4 cup chopped cilantro shopping list
- 2 1/2 Tbs olive oil shopping list
- 1/8 -1/4 cup chopped red onion shopping list
- 2 large garlic cloves chopped very fine (doesn't break up well in food pro.) shopping list
- 1 jalapeno (more or less to your taste) shopping list
- 1 Tbs balsamic vinegar shopping list
- juice of 1 lime shopping list
- 4 8 oz fillets mahi mahi shopping list
- 1 1/2 tsp cumin shopping list
- 1 1/2 tsp. garlic powder shopping list
- S&P shopping list
How to make it
- Pat fish with cumin and garlic powder and S&P.
- Grill about 5-6 minutes on each side.
- While waiting on fish combine cucumber, both onions, cilantro, garlic, jalapeno, balsamic, lime, olive oil and some S&P to taste in food processor. Blend until chunky. If you really prefer it thinner then go ahead and process longer. You may need to add a little more olive oil to get your right consistency. Place a fillet on a plate and top with a generous helping of sauce!
