Ingredients
  • !/2 medium cucumber
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 2 1/2 Tbs olive oil
  • 1/8 -1/4 cup chopped red onion
  • 2 large garlic cloves chopped very fine (doesn't break up well in food pro.)
  • 1 jalapeno (more or less to your taste)
  • 1 Tbs balsamic vinegar
  • Juice of 1 lime
  • 4 8 oz fillets mahi mahi
  • 1 1/2 tsp cumin
  • 1 1/2 tsp. garlic powder
  • S&P

Directions
  1. Pat fish with cumin and garlic powder and S&P.
  2. Grill about 5-6 minutes on each side.
  3. While waiting on fish combine cucumber, both onions, cilantro, garlic, jalapeno, balsamic, lime, olive oil and some S&P to taste in food processor. Blend until chunky. If you really prefer it thinner then go ahead and process longer. You may need to add a little more olive oil to get your right consistency. Place a fillet on a plate and top with a generous helping of sauce!

Oh, I love mahi mahi and happen to have some in my freezer right now. I am so making this as soon as I pick up some jalapeƱos!
