My very favorite of the schnitzels. I like spatzle with mine.

Ingredients
  • 8 ounces fresh mushrooms, sliced
  • 2 tablespoons butter
  • 4 veal cutlets, pounded thin
  • salt and pepper
  • 1 tablespoon flour
  • 1 cup beef stock
  • 1/3 cup red wine

Directions
  1. In a large skillet, sauté the mushrooms in butter. Remove from pan and reserve.
  2. Sauté cutlets briefly. Remove from pan and reserve.
  3. Add flour and stir until just fragrant.
  4. Add stock and wine, stirring until smooth and slightly thickened.
  5. Return mushrooms and veal to pan.
  6. Heat through and serve.

One of my favorite dishes...i must try your version as it seems to be a little healthier than the way i make it....if you havent tried it with pork tho..i highly recommend it...a pork tenderloin sliced thin and pounded works great...

Very good! I used pork as could not find veal in my local grocery....but still the meat was tender and had excellent taste-perfect gravy to go along with as well :)
