Ingredients
  • 1 1/2 cup dry black-eyed peas
  • 2 to 3 cups finely diced, cooked ham
  • 1 (15 oz) can whole kernel corn
  • 1 (10 oz) package frozen cut okra, thawed
  • 1 onion, chopped
  • 2 teaspoons Cajun Seasoning
  • 1 large potato
  • 1 (14 oz) can chicken broth
  • 2 (15 oz) cans Mexican stewed tomatoes
  • 7 cups water
  • salt
  • pepper

Directions
  1. Rinse peas and drain. Combine peas and 5 cups water in large saucepan.
  2. Bring to boil, reduce heat, simmer about 10 minutes and drain.
  3. Combine peas, ham, corn, okra, onion, potato, seasoning, broth in 5 to 6-quart slow cooker.
  4. Add 2 cups water and stir.
  5. Cover and cook on Low for 5-6 hours. Add stewed tomatoes and continue cooking for 1 more hour.
