Oatcakes From Scotland

- 4oz or 125g medium oatmeal, plus some flour and extra oatmeal for sprinkling on your work surface to prevent it from sticking. shopping list
- 1/2 tsp. baking soda shopping list
- 1/4 tsp. salt shopping list
- 2-1/2 tsp. melted bacon fat shopping list
- 1 Tbsp. hot water shopping list
How to make it
- Preheat the oven to Gas5/375F/190C
- In a large bowl mix together oatmeal, salt and baking soda.
- Drizzle the melted fat over and stir well.
- Cut the mixture into two small balls and sprinkle a work surface with flour and oatmeal.
- Roll each ball on the surface to coat and to prevent sticking.
- Knead each ball for a few minutes until it starts to dry slightly and stops sticking to the surface.
- Add a little more oatmeal as required.
- Roll each ball into a 1/4" thick disc, then cut into quarters.
- Place on a greased baking sheet and bake for 30 minutes in the oven or until brown around the edges.
- Oatcakes can be cooked in a hot frying pan for 3 minutes on each side.
