How to make it

  • Preheat the oven to Gas5/375F/190C
  • In a large bowl mix together oatmeal, salt and baking soda.
  • Drizzle the melted fat over and stir well.
  • Cut the mixture into two small balls and sprinkle a work surface with flour and oatmeal.
  • Roll each ball on the surface to coat and to prevent sticking.
  • Knead each ball for a few minutes until it starts to dry slightly and stops sticking to the surface.
  • Add a little more oatmeal as required.
  • Roll each ball into a 1/4" thick disc, then cut into quarters.
  • Place on a greased baking sheet and bake for 30 minutes in the oven or until brown around the edges.
  • Oatcakes can be cooked in a hot frying pan for 3 minutes on each side.
