I made the Ravioli soup tonight and it was so very quick and easy! The only changes I made was to add green onions. I used 2 cans of veggie broth and 2 large cloves of minced garlic. Using fresh parsley and fresh grated parmesan really makes this soup taste great! I served it with homemade french bread. I added my photo :)

This time I made #11...White Bean, Rosemary and Garlic Soup! Another good one! I subbed fresh thyme for the rosemary. Everything else was as written. I used 5 large cloves of garlic (minced), 2 Tbls. olive oil, 14oz. can diced tomatoes, 14oz. can white beans (drained), 1tsp. fresh thyme, 4oz. tomato paste, 2-14oz. cans chicken broth, and 1/2 cup uncooked ditalini pasta. I served it with fresh grated Parmesan cheese. I thought it would need other seasonings but it didn't...it was perfect! I added another photo :)

Now I made #22...the Wonton soup! And its another hit! I can't believe how good these soups are with so few ingredients!
The only change I made was to use bok choy instead of watercress. I made the soup using 2 large scallions, 3 large cloves of garlic, 2 cans of chicken broth, 1 Tbls. pure sesame oil and 12 pot stickers. This was so quick and delicious! I added my photo :)

I made soup #23 (winter vegetable soup) and it was delicious! I only used 1 potato and 1 sweet potato and it gave me a huge amount! I used the chicken buillon powder so it took me about 7 cups of water with 7 tsp powder to cover everything. I did add some fresh rosemary right at the end for a little extra flavor and that's it! I can't wait to try some more of the great soups!!

Tonight I made soup #21 Italian Wedding Soup...It was amazingly good!!! I think this is my favorite one so far! I used a small head of escarole, 2 cans chicken broth, 3/4 cup water, 25 homemade mini meatballs, 1/2 cup small pasta and 1 tbls of grated parmesan cheese per bowl. I served this with Italian bread! This was just perfect! I can't wait to make this for guests! I added another photo! :)

What an outstanding posting this is! Thanks so much for the variety of these wonderful soups! I have made so many different soups throughout my life-this is a novel approach here-I love the Ravioli one and I was thinking of making soup with the beef ravioli in the freezer!
