Ingredients
  • 4 good-sized, lean pork loin boneless chops
  • 4 white potatoes
  • 1 medium sized sweet potato
  • 2 medium-sized carrots (I used Scarlet Nantes & Albino, fresh from the garden for this recipe)
  • 2 cups baby carrots
  • pieces lean bacon (for wrapping the pork)
  • olive oil (amount your choice)
  • 3 parsley sprigs
  • 3 Rosemary sprigs
  • dehydrated onion flakes (amount your choice)
  • salt & pepper to your preference

Directions
  1. Slice washed carrots and potatoes, just enough to fill the pork. Reserve the rest... for stuffing into the pork, cut carrots & potatoes into thin sticks (Batonnette)
  2. Halve the white potatoes, and slice the remaining sweet potato into 1 inch thick pieces
  3. trim the ends off the baby carrots.
  4. place all veggies in a roasting pan and drizzle a generous amount of olive oil over it
  5. add salt & pepper to taste
  6. -------------
  7. for the pork loin chops:
  8. place chops between sheets of plastic wrap, and pound to even thickness. This makes it easier to roll, and helps ensure even cooking time, as well as making the meat more tender.
  9. place carrot & sweet potato sticks on one end of the pork loin chops.
  10. roll the pork into a neat package
  11. Wrap each pork roll with one slice of bacon
  12. place into baking dish and sprinkle with dehydrated onion, amount your preference
  13. add salt & pepper to taste
  14. place Rosemary and parsley sprigs on top
  15. Bake @ 350*F for one hour, or until the veggies are tender, and the pork is golden brown.

I am not even crazy for pork, but this recipe is amazing. It's simple & elegant & how jealous am I that you just run out back & pull up the root veggies you need to make this.
It's also a perfect Main Course for one of the many Perfect Meals we're going to be putting together for Fantasy Fancy Dress With Meals To Die For. Also 5ved & Bookmarked:)
