Elaines Veggy-stuffed Pork Loin Chops With Roasted Root Vegetables

- 4 good-sized, lean pork loin boneless chops shopping list
- 4 white potatoes shopping list
- 1 medium sized sweet potato shopping list
- 2 medium-sized carrots (I used Scarlet Nantes & Albino, fresh from the garden for this recipe) shopping list
- 2 cups baby carrots shopping list
- pieces lean bacon (for wrapping the pork) shopping list
- olive oil (amount your choice) shopping list
- 3 parsley sprigs shopping list
- 3 rosemary sprigs shopping list
- dehydrated onion flakes (amount your choice) shopping list
- salt & pepper to your preference shopping list
How to make it
- Slice washed carrots and potatoes, just enough to fill the pork. Reserve the rest... for stuffing into the pork, cut carrots & potatoes into thin sticks (Batonnette)
- Halve the white potatoes, and slice the remaining sweet potato into 1 inch thick pieces
- trim the ends off the baby carrots.
- place all veggies in a roasting pan and drizzle a generous amount of olive oil over it
- add salt & pepper to taste

- for the pork loin chops:
- place chops between sheets of plastic wrap, and pound to even thickness. This makes it easier to roll, and helps ensure even cooking time, as well as making the meat more tender.
- place carrot & sweet potato sticks on one end of the pork loin chops.
- roll the pork into a neat package
- Wrap each pork roll with one slice of bacon
- place into baking dish and sprinkle with dehydrated onion, amount your preference
- add salt & pepper to taste
- place Rosemary and parsley sprigs on top
- Bake @ 350*F for one hour, or until the veggies are tender, and the pork is golden brown.

I am not even crazy for pork, but this recipe is amazing. It's simple & elegant & how jealous am I that you just run out back & pull up the root veggies you need to make this.
It's also a perfect Main Course for one of the many Perf...morejolielives in The Catskill Plateau loved it
